Interstice damage is the result of being being fractured apart at the most very basic of levels. Rents in the very fabric of reality can inflict Interstice damage, as can sophisticated magical effects. The softness or hardness of the physical body in question means nothing. Interstices can be driven even into bodies of water or gases, destroying them utterly, as the damage comes from below the bounds of reality.
